Campfire Foil Packs
Chicken,Potatoes,Veggies
These are easy to make when you're camping, my family love,love,
loves them.
We prepare them at home and then leave them in the cooler until wer
are ready to cook.
You can use any combination of meat and veggies that you like.
Ingredients:
1 pound of chicken, skinless boneless, breast meat, cubed
2 onions, diced
1 (8oz.) package of sliced mushrooms
1 yellow bell pepper, slice into strips
1 red bell pepper, slice into strips
4 cloves of garlic, sliced thin
4 small potatoes, cubed
1/4 cup olive oil
1 lemon, juiced
salt,pepper, any spice you like
Directions:
1. In a large bowl, or large zip-lock bag, combine the chicken, onion,
mushrooms, yellow and red peppers, garlic and potatoes. Pour olive oil,
lemon juice, spices, mix well, or shake in the bag.
2. Evenly divide the mixture between 4 large sheets of foil. Top each
with another sheet of foil, and roll up the edges tightly. Wrap each
packet again, securely in another foil to double wrap.
3. Cook in the hot coals of the campfire, or on the grill, until the chicken
is opaque and potatoes are soft.
About 20-30 minutes.
*Open carefully to allow steam to escape.
